Minestrone Soup
Sauté: 1 onion, 4 cloves garlic in olive oil, add 8 cups of water, and 3 beef bullion cubes
Then add:
- 4 sliced carrots
- 3 cubed potatoes
- 2 sliced celery
- 1/2 small chopped cabbage
- 1 sliced onion
- 1 diced onion
- 1 diced green pepper
- 1 small can corn undrained
- 1 can cannelloni beans undrained
- 1 can stewed tomatoes undrained
- 1 can tomato paste with 1 can of water
- Bay leaf
- 1 small can string bean undrained
Simmer for 3 hours. Add 1 cup of cooked pasta.
